If you want a real challenge try passover-themed cupcakes. I’ll get a dozen …
Here’s the rules:
No wheat, barley, rye, oats and spelt or any derevation. (100% compliance required)
no yeast or vingar (100% compliance required)
No rice, corn, soy, peanuts (legumes) or a derivative (this rule can be broken by sephardic, but not ashkenaz, Jews)
Try:
Matzo meal
Potato starch
